🥓 The Pioneer Woman’s Cowboy Quiche

This hearty and flavorful quiche is packed with caramelized onions, smoky bacon, and sharp cheddar cheese. It’s perfect for a robust brunch, a quick dinner, or meal-prepping your breakfasts for the week!

Ingredients:

  • 1 pie crust, unbaked
  • 2 large yellow onions, thinly sliced
  • 8 slices bacon, chopped
  • 1 1/2 cups shredded sharp cheddar cheese
  • 8 large eggs
  • 1 1/2 cups heavy cream
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Caramelize onions:
    • In a skillet over medium heat, cook the onions slowly, stirring often, until they are golden brown and sweet — this takes about 15–20 minutes. Don’t rush this step!
  3. Cook bacon:
    • In a separate pan or the same skillet (wiped clean), cook chopped bacon until crisp. Drain on paper towels.
  4. Prepare the crust:
    • Place the unbaked pie crust in a 9-inch pie dish.
  5. Assemble filling:
    • Spread the caramelized onions evenly in the crust.
    • Top with cooked bacon and shredded cheddar cheese.
  6. Make custard:
    • In a bowl, whisk together the eggs, heavy cream, salt, and pepper.
  7. Pour & bake:
    • Pour the egg mixture into the pie crust, over the fillings.
    • Carefully place in the oven and bake for 45–50 minutes, or until set and slightly golden on top.
  8. Cool & serve:
    • Let rest for 10–15 minutes before slicing. Serve warm, at room temperature, or even chilled!
