🥓 The Pioneer Woman’s Cowboy Quiche
This hearty and flavorful quiche is packed with caramelized onions, smoky bacon, and sharp cheddar cheese. It’s perfect for a robust brunch, a quick dinner, or meal-prepping your breakfasts for the week!
Ingredients:
- 1 pie crust, unbaked
- 2 large yellow onions, thinly sliced
- 8 slices bacon, chopped
- 1 1/2 cups shredded sharp cheddar cheese
- 8 large eggs
- 1 1/2 cups heavy cream
- Salt and pepper, to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Caramelize onions:
- In a skillet over medium heat, cook the onions slowly, stirring often, until they are golden brown and sweet — this takes about 15–20 minutes. Don’t rush this step!
- Cook bacon:
- In a separate pan or the same skillet (wiped clean), cook chopped bacon until crisp. Drain on paper towels.
- Prepare the crust:
- Place the unbaked pie crust in a 9-inch pie dish.
- Assemble filling:
- Spread the caramelized onions evenly in the crust.
- Top with cooked bacon and shredded cheddar cheese.
- Make custard:
- In a bowl, whisk together the eggs, heavy cream, salt, and pepper.
- Pour & bake:
- Pour the egg mixture into the pie crust, over the fillings.
- Carefully place in the oven and bake for 45–50 minutes, or until set and slightly golden on top.
- Cool & serve:
- Let rest for 10–15 minutes before slicing. Serve warm, at room temperature, or even chilled!
