Smoked Sausage and Potato Bake

Introduction

This Smoked Sausage and Potato Bake is a comforting, all-in-one dinner that’s perfect for busy weeknights. Roasted potatoes, tender-crisp veggies, and smoky sausage come together in one pan with simple seasonings. It’s budget-friendly, endlessly adaptable, and absolutely delicious.


Ingredients

  • 1 lb smoked sausage, sliced into ½-inch rounds
  • 1½ lbs baby potatoes (red or yellow), halved or quartered
  • 1 medium bell pepper, sliced (any color)
  • 1 small red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish, optional)
  • Optional: shredded cheddar cheese for topping

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  2. Prep ingredients: Place the sliced sausage, potatoes, bell pepper, and onion in the dish.
  3. Season: Drizzle with olive oil, then sprinkle garlic powder, paprika, Italian seasoning, salt, and pepper. Toss everything together to coat evenly.
  4. Bake uncovered for 35–40 minutes, stirring halfway through, until the potatoes are tender and golden, and the sausage is browned.
  5. (Optional): Sprinkle with shredded cheese during the last 5 minutes of baking and return to oven until melted.
  6. Garnish and serve: Sprinkle with fresh parsley and serve warm.
