This Smoked Sausage and Potato Bake is a comforting, all-in-one dinner that’s perfect for busy weeknights. Roasted potatoes, tender-crisp veggies, and smoky sausage come together in one pan with simple seasonings. It’s budget-friendly, endlessly adaptable, and absolutely delicious.
Ingredients
- 1 lb smoked sausage, sliced into ½-inch rounds
- 1½ lbs baby potatoes (red or yellow), halved or quartered
- 1 medium bell pepper, sliced (any color)
- 1 small red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon Italian seasoning
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish, optional)
- Optional: shredded cheddar cheese for topping
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
- Prep ingredients: Place the sliced sausage, potatoes, bell pepper, and onion in the dish.
- Season: Drizzle with olive oil, then sprinkle garlic powder, paprika, Italian seasoning, salt, and pepper. Toss everything together to coat evenly.
- Bake uncovered for 35–40 minutes, stirring halfway through, until the potatoes are tender and golden, and the sausage is browned.
- (Optional): Sprinkle with shredded cheese during the last 5 minutes of baking and return to oven until melted.
- Garnish and serve: Sprinkle with fresh parsley and serve warm.
