Slumgullion is a classic American comfort food, often described as a skillet version of chili mac. This one-pot recipe features a savory ground beef and tomato sauce base simmered with macaroni until tender. It’s an easy, budget-friendly meal that’s perfect for a weeknight dinner and is sure to become a family favorite.

How To Make Slumgullion:

  1. Brown the Meat and Veggies: In a large pot or Dutch oven over medium-high heat, heat the olive oil. Add the diced onion, diced bell pepper, and ground beef. Season with salt and pepper, and cook, stirring occasionally, until the beef is browned and the vegetables are softened. Add the minced garlic and cook for 30 more seconds.
  2. Simmer the Sauce: Stir in the beef broth, tomato sauce, crushed tomatoes, Worcestershire sauce, Italian seasoning, bay leaf, and paprika. Season with a little more salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes to allow the flavors to meld.
  3. Cook the Macaroni: Stir the dry macaroni into the sauce. Increase the heat to medium-high and cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and the sauce has thickened.
  4. Finish and Serve: Remove the pot from the heat and take out the bay leaf. Stir in the cheddar cheese until it is completely melted and the sauce is creamy. Season to taste with additional salt and pepper if needed. Serve immediately.
