Introduction

Sausage, Peppers, and Onions is a classic Italian-American comfort dish made with juicy sausage links, sweet bell peppers, and caramelized onions. Whether served on a hoagie roll or over pasta, this dish bursts with savory flavors and is ready in under 40 minutes.


Ingredients (Serves 4–6)

  • 1 tablespoon olive oil
  • 1 lb (450 g) Italian sausage links (mild or hot)
  • 2 large bell peppers (red, yellow, or green), sliced into strips
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • 1 can (14.5 oz) diced tomatoes (optional, for saucier version)
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown sausage: Heat olive oil in a large skillet over medium heat. Add sausage links and cook until browned on all sides, about 5–7 minutes. Remove sausage from the skillet and set aside.
  2. Cook vegetables: In the same skillet, add sliced peppers and onions. Sauté for 5–6 minutes until softened. Add garlic and cook for 1 more minute.
  3. Combine: Slice sausage into bite-sized pieces and return to the skillet. Stir in chicken broth, diced tomatoes (if using), and Italian seasoning.
  4. Simmer: Reduce heat to low, cover, and simmer for 10–15 minutes until sausage is fully cooked and flavors blend.
  5. Serve: Garnish with fresh parsley. Enjoy in sandwich rolls, over pasta, or with crusty bread.

Tips & Variations

  • For a spicy kick, use hot Italian sausage or add red pepper flakes.
  • Make it low-carb by skipping bread and serving over zucchini noodles.
  • Add mushrooms for extra flavor and texture.
