Ingredients (Serves 4–6)
- 1 tablespoon olive oil
- 1 lb (450 g) Italian sausage links (mild or hot)
- 2 large bell peppers (red, yellow, or green), sliced into strips
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- ½ cup chicken broth
- 1 can (14.5 oz) diced tomatoes (optional, for saucier version)
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Brown sausage: Heat olive oil in a large skillet over medium heat. Add sausage links and cook until browned on all sides, about 5–7 minutes. Remove sausage from the skillet and set aside.
- Cook vegetables: In the same skillet, add sliced peppers and onions. Sauté for 5–6 minutes until softened. Add garlic and cook for 1 more minute.
- Combine: Slice sausage into bite-sized pieces and return to the skillet. Stir in chicken broth, diced tomatoes (if using), and Italian seasoning.
- Simmer: Reduce heat to low, cover, and simmer for 10–15 minutes until sausage is fully cooked and flavors blend.
