Potato Fritters: You Won’t Be Able to Stop at One!

Introduction

Potato fritters are the perfect balance of crispy edges and soft, fluffy centers. Made with simple ingredients you already have in your kitchen, these fritters are versatile enough to serve as a snack, appetizer, or side dish. They’re golden, savory, and so moreish, you’ll find yourself reaching for seconds (and thirds).


Ingredients (Makes about 10–12 fritters)

  • 3 medium potatoes, peeled and grated
  • ½ small onion, grated (optional, for flavor)
  • 1 large egg
  • ¼ cup all-purpose flour (or cornstarch for extra crispiness)
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika or cayenne (optional, for a little heat)
  • Oil for frying (vegetable or canola)

Instructions

  1. Prep potatoes: Grate the potatoes and squeeze out as much water as possible using a clean towel or cheesecloth.
  2. Mix batter: In a bowl, combine grated potatoes, onion, egg, flour, baking powder, salt, pepper, and paprika. Stir until mixture holds together.
  3. Heat oil: In a skillet, heat about ¼ inch of oil over medium heat until shimmering.
  4. Fry fritters: Drop spoonfuls of the potato mixture into hot oil, flatten slightly with a spatula, and cook 2–3 minutes per side until golden and crispy.
  5. Drain & serve: Place fritters on paper towels to drain excess oil. Serve hot.

Tips & Variations

  • Serve with sour cream, ranch, or garlic aioli for dipping.
  • Add shredded cheese, chives, or herbs into the batter for more flavor.
  • Make them spicy with chopped jalapeños or chili flakes.
  • For a lighter version, bake at 400°F (200°C) on a greased sheet for 20–25 minutes, flipping halfway through.
