Ingredients:
- 4 medium potatoes, diced (Yukon Gold or Russet work best)
- 1 large onion, sliced or chopped
- 2–3 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and black pepper, to taste
- Optional: chopped parsley, rosemary, or grated cheese for garnish
Instructions:
- Preheat Oven:
Heat your oven to 220°C (425°F). Line a large baking sheet with parchment paper or foil for easy cleanup. - Prep Ingredients:
In a large bowl, toss the diced potatoes and onions with olive oil, garlic powder, paprika, salt, and pepper until evenly coated. - Spread & Roast:
Spread the mixture in a single layer on the baking sheet. Roast for 25–30 minutes, flipping halfway through, until the potatoes are golden and crispy and the onions are caramelized. - Garnish & Serve:
