Mexican Chicken Pinwheels

Introduction

Mexican Chicken Pinwheels are bite-sized tortilla wraps filled with seasoned chicken, creamy cheese, and colorful vegetables. They’re easy to make ahead, transport well, and are always a hit at gatherings. The flavors of taco seasoning, tender chicken, and fresh veggies make them both satisfying and refreshing.


Ingredients (Makes about 24 pinwheels)

  • 2 cups cooked chicken, shredded
  • 8 oz (225 g) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 packet taco seasoning
  • ½ cup salsa (drained if chunky)
  • ¼ cup chopped green onions
  • ¼ cup diced red bell pepper
  • 4 large flour tortillas (10-inch)

Instructions

  1. Prepare filling: In a large mixing bowl, combine shredded chicken, cream cheese, cheddar, taco seasoning, salsa, green onions, and red bell pepper. Mix until well combined.
  2. Assemble wraps: Spread a generous layer of the chicken mixture evenly over each tortilla.
  3. Roll tightly: Starting from one edge, roll each tortilla tightly into a log shape.
  4. Chill: Wrap each log in plastic wrap and refrigerate for at least 1 hour (this helps firm them up for cleaner slicing).
  5. Slice & serve: Remove from fridge, unwrap, and slice each log into 1-inch pieces. Arrange on a platter and serve chilled or at room temperature.

Tips & Variations

  • Use rotisserie chicken for faster prep.
  • Swap cheddar for pepper jack for extra spice.
  • Add chopped cilantro or black beans for more flavor and texture.
  • Serve with guacamole, sour cream, or extra salsa for dipping.
