Mexican Chicken Pinwheels are bite-sized tortilla wraps filled with seasoned chicken, creamy cheese, and colorful vegetables. They’re easy to make ahead, transport well, and are always a hit at gatherings. The flavors of taco seasoning, tender chicken, and fresh veggies make them both satisfying and refreshing.
Ingredients (Makes about 24 pinwheels)
- 2 cups cooked chicken, shredded
- 8 oz (225 g) cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 packet taco seasoning
- ½ cup salsa (drained if chunky)
- ¼ cup chopped green onions
- ¼ cup diced red bell pepper
- 4 large flour tortillas (10-inch)
Instructions
- Prepare filling: In a large mixing bowl, combine shredded chicken, cream cheese, cheddar, taco seasoning, salsa, green onions, and red bell pepper. Mix until well combined.
- Assemble wraps: Spread a generous layer of the chicken mixture evenly over each tortilla.
- Roll tightly: Starting from one edge, roll each tortilla tightly into a log shape.
- Chill: Wrap each log in plastic wrap and refrigerate for at least 1 hour (this helps firm them up for cleaner slicing).
- Slice & serve: Remove from fridge, unwrap, and slice each log into 1-inch pieces. Arrange on a platter and serve chilled or at room temperature.
