Loaded Cheesy Pocket Tacos are a handheld flavor bomb! Think classic taco fillings wrapped in a golden, cheesy tortilla “pocket.” They’re crunchy, gooey, and loaded with beef, beans, cheese, and toppings—easy to make, fun to eat, and perfect for weeknights or parties.
Ingredients:
- 1 lb (450g) ground beef
- 1 packet taco seasoning + water (as per packet instructions)
- 1/2 cup refried beans (optional but delish)
- 1 cup shredded cheddar or Mexican blend cheese
- 8 small flour tortillas (6–8 inch)
- Oil or butter for frying
- Optional fillings: diced tomatoes, jalapeños, onions, or black olives
- Optional toppings: sour cream, guacamole, salsa, shredded lettuce
Instructions:
- Cook the Beef:
In a skillet over medium heat, brown ground beef. Drain fat, then stir in taco seasoning and water. Simmer until thickened. Add refried beans and mix well. Set aside. - Assemble Pockets:
Lay a tortilla flat. On one half, add a spoonful of meat mixture and a generous handful of shredded cheese. Add any extras like jalapeños or diced tomatoes. - Fold & Seal:
Fold tortilla over like a taco, then press edges to seal into a half-moon. Use a little water on the edge if needed to help it stick. - Crisp the Pockets:
Heat a bit of oil or butter in a pan over medium heat. Cook each taco pocket for 2–3 minutes per side until golden and crispy, and the cheese is melted inside. - Serve:
