Kentucky Butter Cake Cookies

Introduction

Inspired by the famous Kentucky Butter Cake, these cookies are rich, tender, and perfectly sweet. Each bite has a melt-in-your-mouth buttery flavor, and the glaze gives them that irresistible, slightly crisp coating. They’re perfect for holidays, parties, or anytime you want a cookie that truly impresses.


Ingredients (Makes about 24 cookies)

For the cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup buttermilk

For the glaze:

  • ½ cup unsalted butter
  • ¾ cup granulated sugar
  • 2 tablespoons water
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven: Heat to 350°F (175°C). Line baking sheets with parchment paper.
  2. Make cookie dough: In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture, alternating with buttermilk, until combined.
  3. Shape & bake: Scoop tablespoon-sized portions of dough onto baking sheets. Bake 10–12 minutes, or until edges are set and tops are slightly golden. Cool slightly.
  4. Prepare glaze: In a small saucepan, melt butter. Stir in sugar and water, cooking just until sugar dissolves. Remove from heat and stir in vanilla.
  5. Glaze cookies: While cookies are still warm, brush glaze generously over tops. Let glaze soak in and set before serving.
