Hearty Vegetable Soup
Introduction:
This hearty soup is a comforting bowl of goodness—filled with tender vegetables, nourishing broth, and bold flavor. It’s perfect for chilly evenings, meal prepping, or whenever you need a cozy, wholesome meal in one pot.
Ingredients:
- 2 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 potatoes, peeled and cubed
- 1 zucchini, chopped
- 1 can (15 oz) diced tomatoes
- 4 cups vegetable or chicken broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper, to taste
- Optional: 1 cup cooked beans, pasta, or shredded chicken
- Fresh parsley, for garnish
Instructions:
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until fragrant.
- Add Veggies: Stir in carrots, celery, and potatoes. Cook for 5 minutes. Add zucchini and canned tomatoes (with juice).
- Add Broth & Seasoning: Pour in the broth and add thyme, oregano, salt, and pepper. Bring to a boil.
- Simmer: Reduce heat and simmer for 20–25 minutes, or until vegetables are tender.
- Customize: Stir in beans, pasta, or cooked meat if using. Simmer 5 more minutes.
- Serve: Ladle into bowls and garnish with fresh parsley. Serve with crusty bread.
