Hearty Vegetable Soup

Introduction:
This hearty soup is a comforting bowl of goodness—filled with tender vegetables, nourishing broth, and bold flavor. It’s perfect for chilly evenings, meal prepping, or whenever you need a cozy, wholesome meal in one pot.


Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 potatoes, peeled and cubed
  • 1 zucchini, chopped
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Optional: 1 cup cooked beans, pasta, or shredded chicken
  • Fresh parsley, for garnish

Instructions:

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until fragrant.
  2. Add Veggies: Stir in carrots, celery, and potatoes. Cook for 5 minutes. Add zucchini and canned tomatoes (with juice).
  3. Add Broth & Seasoning: Pour in the broth and add thyme, oregano, salt, and pepper. Bring to a boil.
  4. Simmer: Reduce heat and simmer for 20–25 minutes, or until vegetables are tender.
  5. Customize: Stir in beans, pasta, or cooked meat if using. Simmer 5 more minutes.
  6. Serve: Ladle into bowls and garnish with fresh parsley. Serve with crusty bread.
