Introduction:
Sweet, creamy, and surprisingly refreshing—this corn ice cream is a delightful twist on traditional dessert. Made entirely in a blender with just 4 simple ingredients, it’s an easy, no-churn treat that celebrates the natural sweetness of corn.
Ingredients:
- 1 1/2 cups sweet corn kernels (fresh, frozen, or canned – drained if canned)
- 1 cup heavy cream (or coconut cream for dairy-free)
- 1/2 cup sweetened condensed milk
- 1 tsp vanilla extract (optional, for extra flavor)
Instructions:
- Blend:
Add corn kernels, heavy cream, sweetened condensed milk, and vanilla extract (if using) to a blender. Blend until completely smooth. - Strain (Optional):
For a smoother texture, strain the mixture through a fine mesh sieve to remove any fibrous bits. - Freeze:
Pour the mixture into a freezer-safe container. Cover and freeze for 4–6 hours, or until firm. - Serve:
Scoop and enjoy! Optionally top with a sprinkle of cinnamon, honey drizzle, or a few whole corn kernels for texture.
