Ingredients (Serves 2)
- 2–3 ripe heirloom tomatoes, thickly sliced
- 4 slices rustic bread (sourdough, ciabatta, or whole grain)
- 2–3 tablespoons mayonnaise (or cream cheese for a richer taste)
- 1 tablespoon olive oil (optional, for brushing bread)
- Fresh basil leaves (optional)
- Salt and freshly ground black pepper, to taste
Instructions
- Prepare bread: Lightly toast bread slices for extra crunch, or leave them soft if preferred. Brush with olive oil if toasting.
- Spread: Generously spread mayonnaise (or cream cheese) on one side of each slice.
- Assemble: Layer thick slices of heirloom tomatoes on top. Add fresh basil leaves if using.
- Season: Sprinkle with salt and freshly cracked black pepper to bring out the tomatoes’ natural sweetness.
- Serve: Press sandwich together, slice in half, and enjoy immediately.
