For the peach filling:

  • 6–8 fresh peaches, peeled, pitted, and sliced (about 5 cups)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

For the cobbler topping:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • ½ cup unsalted butter, melted

Instructions

  1. Prepare peaches:
    • Preheat oven to 375°F (190°C).
    • In a large bowl, mix peaches with sugars, lemon juice, vanilla, cinnamon, nutmeg, and cornstarch. Stir well and set aside.
  2. Make the batter:
    • In another bowl, whisk together flour, sugar, baking powder, and salt.
    • Slowly stir in milk until smooth.
  3. Assemble cobbler:
    • Pour melted butter into a 9×13-inch baking dish.
    • Pour batter over the butter (do not stir).
    • Spoon peach mixture evenly on top (batter will rise as it bakes).
  4. Bake:
    • Bake uncovered for 40–45 minutes, until golden brown and bubbly.
  5. Serve:
    • Allow to cool slightly before serving warm with vanilla ice cream or whipped cream.

Tips & Variations

  • Use ripe, juicy peaches for best flavor. If out of season, frozen peaches work too.
  • Sprinkle the top with a little cinnamon sugar before baking for extra crunch.
  • For a richer flavor, swap half the milk with heavy cream.
  • Add a handful of blueberries or raspberries for a fruity twist.

Enjoy !!
