For the peach filling:
- 6–8 fresh peaches, peeled, pitted, and sliced (about 5 cups)
- 1 cup granulated sugar
- ½ cup brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 teaspoons cornstarch
For the cobbler topping:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup milk
- ½ cup unsalted butter, melted
Instructions
- Prepare peaches:
- Preheat oven to 375°F (190°C).
- In a large bowl, mix peaches with sugars, lemon juice, vanilla, cinnamon, nutmeg, and cornstarch. Stir well and set aside.
- Make the batter:
- In another bowl, whisk together flour, sugar, baking powder, and salt.
- Slowly stir in milk until smooth.
- Assemble cobbler:
- Pour melted butter into a 9×13-inch baking dish.
- Pour batter over the butter (do not stir).
- Spoon peach mixture evenly on top (batter will rise as it bakes).
- Bake:
- Bake uncovered for 40–45 minutes, until golden brown and bubbly.
- Serve:
- Allow to cool slightly before serving warm with vanilla ice cream or whipped cream.
