Introduction
French Onion Meatloaf takes the beloved flavors of French onion soup — caramelized onions, beef, and melted cheese — and transforms them into a hearty, family-style dinner. Moist, flavorful, and cheesy, this dish is a perfect comfort meal for any day of the week.
Ingredients (Serves 6–8)
- 2 lbs ground beef (or a mix of beef and pork)
- 2 large onions, thinly sliced
- 3 tablespoons butter
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- ½ cup beef broth
- 1 teaspoon thyme (fresh or dried)
- 1 cup breadcrumbs (panko or regular)
- 2 large eggs
- 1 cup shredded Gruyère or mozzarella cheese
- Salt & black pepper, to taste
For topping:
- 1 cup shredded Gruyère or mozzarella cheese
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Caramelize onions: In a skillet, melt butter over medium heat. Add onions and cook slowly for 20–25 minutes until golden and caramelized. Add garlic, thyme, Worcestershire sauce, and beef broth. Simmer until slightly reduced. Let cool slightly.
- Mix meatloaf: In a large bowl, combine ground beef, breadcrumbs, eggs, half of the caramelized onion mixture, and 1 cup shredded cheese. Season with salt and pepper. Mix gently until combined.
- Shape and bake: Preheat oven to 375°F (190°C). Form meat mixture into a loaf shape on a greased baking dish. Spread the remaining onion mixture on top.
- Add cheese topping: Sprinkle the top with remaining Gruyère or mozzarella cheese.
- Bake: Bake for 45–55 minutes, until meatloaf is cooked through (internal temp 160°F / 70°C).
- Serve: Let rest 10 minutes before slicing. Garnish with fresh parsley if desired.
