Crispy chicken tacos are the perfect combo of crunchy, juicy, and flavorful. With golden fried chicken tucked into warm tortillas and topped with fresh fixings, they’re a fun and satisfying twist on taco night.
Ingredients:
For the Chicken:
- 2 boneless chicken breasts, cut into strips
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup cornmeal or breadcrumbs (optional for extra crunch)
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Oil for frying
For the Tacos:
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes or salsa
- 1/2 cup shredded cheese (cheddar, Monterey Jack, etc.)
- Sour cream, avocado, or taco sauce (optional)
Instructions:
- Marinate Chicken: Soak chicken strips in buttermilk for 20–30 minutes (or overnight for best flavor).
- Prepare Coating: In a bowl, mix flour, cornmeal (if using), paprika, garlic powder, salt, and pepper.
- Coat & Fry: Dredge chicken strips in the dry mix. Heat oil in a skillet and fry chicken until golden and crispy (about 3–5 minutes per side). Drain on paper towels.
- Warm Tortillas: Heat tortillas in a dry skillet or microwave until soft and pliable.
- Assemble Tacos: Place crispy chicken in each tortilla. Top with lettuce, tomatoes, cheese, and any extras you like.
- Serve: Enjoy immediately while hot and crunchy!
