Copycat Mexican Pizza

Introduction

Crispy tortillas, seasoned beef, refried beans, and melted cheese topped with fresh veggies—this Copycat Mexican Pizza brings back all the flavors of the iconic fast-food favorite. With its layers of savory fillings and golden-baked crust, it’s a fun and delicious dinner you can whip up in under 30 minutes.


Ingredients (Makes 4 pizzas)

  • 8 small flour tortillas
  • 1 lb (450g) ground beef
  • 1 packet taco seasoning (or 2 tablespoons homemade mix)
  • 1 (16 oz) can refried beans
  • 1/2 cup enchilada sauce or mild taco sauce
  • 2 cups shredded Mexican blend cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • Oil for frying (or cooking spray for baking)

Instructions

  1. Cook the beef:
    In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat, then stir in taco seasoning and water according to the packet directions. Simmer until thickened.
  2. Prepare the tortillas:
    • Frying method: Heat a small amount of oil in a skillet over medium heat. Fry each tortilla for 1–2 minutes per side until golden and crispy. Drain on paper towels.
    • Baking method: Place tortillas on a baking sheet, brush lightly with oil or spray with cooking spray, and bake at 400°F (200°C) for 5–7 minutes per side until crisp.
  3. Heat the beans:
    Warm refried beans in a small saucepan or in the microwave until spreadable.
  4. Assemble the pizzas:
    • Place one tortilla on a baking sheet. Spread a layer of refried beans, then a layer of seasoned beef.
    • Top with a second tortilla. Spread 2 tablespoons of enchilada sauce or taco sauce over the top, then sprinkle with cheese.
  5. Bake:
    Bake assembled pizzas at 400°F (200°C) for 8–10 minutes, or until cheese is melted and bubbly.
  6. Garnish and serve:
    Remove from the oven and top with diced tomatoes and green onions. Slice into wedges and serve hot.
