Introduction
These Chocolate Rice Krispie Balls are crunchy, chewy, and chocolatey little bites of joy. With only a handful of ingredients and no oven required, they come together quickly and are great for gifting, entertaining, or snacking. Kids and adults alike love them!
Ingredients (Makes about 20–24 balls)
- 3 cups Rice Krispies cereal
- 1 cup creamy peanut butter (or almond butter)
- ½ cup honey (or corn syrup for stickiness)
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil (optional, for smoother melting)
Instructions
- Melt base: In a medium saucepan, heat peanut butter and honey over low heat until smooth and well combined.
- Mix in cereal: Remove from heat and stir in Rice Krispies until evenly coated.
- Shape balls: Let mixture cool slightly, then roll into bite-sized balls. Place on a parchment-lined tray.
- Prepare chocolate coating: In a microwave-safe bowl, melt chocolate chips and coconut oil in 20–30 second intervals, stirring until smooth.
- Dip & coat: Roll each Rice Krispie ball into the melted chocolate until fully coated. Return to tray.
- Chill: Refrigerate for about 30 minutes, or until chocolate sets.
- Serve: Enjoy chilled or at room temperature!
Tips & Variations
- Roll in sprinkles, shredded coconut, or crushed nuts before the chocolate hardens for extra flair.
- Use dark chocolate for a richer flavor or white chocolate for a fun twist.
- Add a pinch of sea salt on top for that sweet-salty balance.
