Ingredients (Makes about 20–24 balls)

  • 3 cups Rice Krispies cereal
  • 1 cup creamy peanut butter (or almond butter)
  • ½ cup honey (or corn syrup for stickiness)
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional, for smoother melting)

Instructions

  1. Melt base: In a medium saucepan, heat peanut butter and honey over low heat until smooth and well combined.
  2. Mix in cereal: Remove from heat and stir in Rice Krispies until evenly coated.
  3. Shape balls: Let mixture cool slightly, then roll into bite-sized balls. Place on a parchment-lined tray.
  4. Prepare chocolate coating: In a microwave-safe bowl, melt chocolate chips and coconut oil in 20–30 second intervals, stirring until smooth.
  5. Dip & coat: Roll each Rice Krispie ball into the melted chocolate until fully coated. Return to tray.
  6. Chill: Refrigerate for about 30 minutes, or until chocolate sets.
  7. Serve: Enjoy chilled or at room temperature!

Tips & Variations

  • Roll in sprinkles, shredded coconut, or crushed nuts before the chocolate hardens for extra flair.
  • Use dark chocolate for a richer flavor or white chocolate for a fun twist.
  • Add a pinch of sea salt on top for that sweet-salty balance.
  • Store in an airtight container in the fridge for up to 1 week.

Enjoy !!
