Cheesy Baked Zucchini Tots

Introduction

These Cheesy Baked Zucchini Tots are a healthy twist on traditional tater tots, made with fresh zucchini, shredded cheese, and simple seasonings. Crispy on the outside and tender on the inside, they’re perfect for dipping, snacking, or serving as a fun side. Bonus: they’re oven-baked, not fried!


Ingredients (Makes about 20 tots)

  • 2 cups grated zucchini (about 2 medium zucchinis)
  • ½ teaspoon salt (for draining zucchini)
  • ½ cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • ½ cup breadcrumbs (panko or regular)
  • 1 large egg
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped parsley or chives for added flavor

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Drain zucchini: Place grated zucchini in a clean kitchen towel. Sprinkle with ½ tsp salt, let sit for 10 minutes, then squeeze out as much liquid as possible.
  3. Mix ingredients: In a large bowl, combine drained zucchini, cheddar cheese, Parmesan, breadcrumbs, egg, garlic powder, onion powder, salt, pepper, and herbs (if using). Stir until well combined.
  4. Shape the tots: Scoop about 1 tablespoon of the mixture and form it into a small tot shape. Repeat with the rest of the mixture.
  5. Bake: Place tots on the prepared baking sheet. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  6. Serve warm with ketchup, ranch dressing, or your favorite dipping sauce.

Tips & Variations

  • For a low-carb version, use almond flour instead of breadcrumbs.
  • Add a little hot sauce or chili flakes for a spicy kick.
  • Make them mini for a party appetizer platter.
