Introduction
This salad combines tender broccoli florets, fluffy rice, and sharp cheddar cheese into one delicious dish. Tossed with a creamy dressing, it’s both hearty and refreshing — making it a great side for potlucks, BBQs, or holiday spreads.
Ingredients (Serves 6–8)
- 3 cups cooked rice (white or brown, cooled)
- 3 cups fresh broccoli florets, lightly steamed or blanched
- 1 cup sharp cheddar cheese, cubed (or shredded)
- ½ cup red onion, finely diced
- ½ cup celery, chopped
- ½ cup mayonnaise
- ½ cup sour cream (or plain Greek yogurt)
- 1 tablespoon apple cider vinegar (or lemon juice)
- 1 teaspoon sugar (optional)
- Salt and black pepper, to taste
Instructions
- Prepare ingredients: Cook rice ahead of time and let cool. Lightly steam broccoli until just tender but still crisp. Drain well.
- Mix salad base: In a large bowl, combine rice, broccoli, cheddar cheese, onion, and celery.
- Make dressing: In a small bowl, whisk together mayonnaise, sour cream, vinegar, sugar, salt, and pepper until smooth.
- Combine: Pour dressing over salad and toss until everything is evenly coated.
- Chill & serve: Cover and refrigerate for at least 1 hour before serving to let flavors meld.
