Introduction
This dish is the definition of comfort food. Tender beef tips simmered in a rich, creamy gravy and served over soft egg noodles make for a filling and satisfying meal. It’s easy enough for a weeknight but special enough for Sunday dinner.
Ingredients (Serves 4–6)
- 1 ½ lbs beef stew meat or sirloin tips, cubed
- 2 tablespoons olive oil or butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 2 tablespoons flour (or cornstarch for gluten-free)
- 1 cup heavy cream (or sour cream for a tangier flavor)
- Salt and black pepper, to taste
- 12 oz wide egg noodles, cooked and drained
- Fresh parsley, chopped (for garnish)
Instructions
- Brown the beef: In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add beef tips and cook until browned on all sides. Remove and set aside.
- Sauté aromatics: In the same skillet, add onion and garlic. Cook until softened and fragrant.
- Build the gravy: Sprinkle in flour, stirring to coat the onions. Slowly whisk in beef broth to create a smooth base. Add Worcestershire sauce, thyme, and paprika. Simmer for 5 minutes.
- Simmer beef: Return beef tips to the pan. Reduce heat to low, cover, and simmer for 45–60 minutes, or until beef is tender.
- Finish with cream: Stir in heavy cream and let cook for 5 more minutes. Adjust seasoning with salt and pepper.
- Serve: Place egg noodles on plates and spoon beef tips with creamy gravy on top. Garnish with fresh parsley.
Tips & Variations
- Use a slow cooker: Cook on low for 6–7 hours for fall-apart tender beef.
- Swap mushrooms in place of onions for a mushroom gravy variation.
- For a lighter version, replace heavy cream with half-and-half or Greek yogurt.
- Serve with mashed potatoes or rice instead of egg noodles for a different twist.
