Ingredients (Serves 6–8)
- 1 (3–4 lb) chuck roast
- 1 packet ranch dressing mix
- 1 packet Italian dressing mix
- 1 packet brown gravy mix
- 1 cup beef broth
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 4–5 large carrots, cut into chunks
- 4–5 medium potatoes, cut into chunks
- Fresh parsley, for garnish (optional)
Instructions
- Preheat oven: Set your oven to 325°F (165°C).
- Sear the roast: Heat olive oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until browned, about 3–4 minutes per side.
- Prepare seasoning mix: In a bowl, whisk together ranch, Italian, and brown gravy packets with beef broth.
- Assemble roast: Place the roast in a large Dutch oven or baking dish. Add onions, carrots, and potatoes around the meat. Pour seasoning mixture over everything.
- Bake: Cover tightly with foil or a lid and bake for 3–4 hours, until roast is fork-tender.
- Serve: Shred the roast slightly and spoon gravy over the meat and vegetables. Garnish with parsley if desired.
