This Bacon Cheeseburger Casserole has everything you love about a bacon cheeseburger but baked into a creamy, cheesy casserole. It’s easy to make, budget-friendly, and a guaranteed hit with both kids and adults. Perfect for weeknight dinners, potlucks, or when you’re craving comfort food with a twist.
Ingredients (Serves 6–8)
- 1 lb ground beef
- 6 slices bacon, cooked and crumbled
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) condensed cheddar cheese soup (or cream of mushroom)
- 1 cup sour cream
- 2 cups shredded cheddar cheese (divided)
- ½ teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt
- 12 oz pasta (elbow macaroni, penne, or rotini work well)
- Chopped green onions or parsley (for garnish)
Instructions
- Cook pasta: Boil pasta according to package directions until al dente. Drain and set aside.
- Cook beef: In a large skillet, cook ground beef and onion over medium heat until beef is browned. Drain excess fat. Stir in garlic and cook for 1 more minute.
- Prepare filling: Mix beef with bacon, condensed soup, sour cream, paprika, salt, pepper, and 1 cup shredded cheddar. Stir until well combined.
- Assemble casserole: Preheat oven to 350°F (175°C). In a greased 9×13-inch baking dish, combine pasta and beef mixture. Top with remaining cheese.
- Bake: Bake uncovered for 20–25 minutes, until bubbly and cheese is melted.
- Serve: Garnish with parsley or green onions and serve warm.
