Introduction

The A&P Spanish Bar is a nostalgic dessert from the old Great Atlantic & Pacific Tea Company grocery stores. Known for its soft, spiced cake base studded with raisins and topped with a sweet glaze, it’s a simple yet flavorful treat that pairs beautifully with coffee or tea. This classic bakery favorite has a moist texture, warm cinnamon aroma, and just the right amount of sweetness.


Ingredients (Makes 1 loaf)

For the cake:

  • 1 cup raisins
  • 1 cup water
  • 1/2 cup shortening (or unsalted butter)
  • 1 cup granulated sugar
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

For the glaze:

  • 1 cup powdered sugar
  • 1–2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare raisins:
    In a small saucepan, combine raisins and water. Bring to a boil, then remove from heat and let cool slightly. Do not drain.
  2. Mix wet ingredients:
    In a large bowl, cream together shortening and sugar until light and fluffy. Beat in the egg.
  3. Add raisin mixture:
    Stir in the raisins along with their cooking liquid.
  4. Mix dry ingredients:
    In a separate bowl, whisk together flour, baking soda, cinnamon, allspice, nutmeg, and salt. Gradually add to the wet mixture, stirring until combined. Fold in walnuts if using.
  5. Bake:
    Pour batter into a greased 9×5-inch loaf pan. Bake at 350°F (175°C) for 40–45 minutes, or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack.
  6. Glaze:
    Mix powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled loaf.

Tips & Variations

  • Soak the raisins in rum or brandy instead of water for a richer flavor.
  • Add a bit of orange zest to the batter for brightness.
  • Store in an airtight container for up to 4 days — the flavor deepens over time.
