Known for its soft, spiced cake base studded with raisins and topped with a sweet glaze, it’s a simple yet flavorful treat that pairs beautifully with coffee or tea. This classic bakery favorite has a moist texture, warm cinnamon aroma, and just the right amount of sweetness.
Ingredients (Makes 1 loaf)
For the cake:
- 1 cup raisins
- 1 cup water
- 1/2 cup shortening (or unsalted butter)
- 1 cup granulated sugar
- 1 large egg
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts (optional)
For the glaze:
- 1 cup powdered sugar
- 1–2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Prepare raisins:
In a small saucepan, combine raisins and water. Bring to a boil, then remove from heat and let cool slightly. Do not drain. - Mix wet ingredients:
In a large bowl, cream together shortening and sugar until light and fluffy. Beat in the egg. - Add raisin mixture:
Stir in the raisins along with their cooking liquid. - Mix dry ingredients:
In a separate bowl, whisk together flour, baking soda, cinnamon, allspice, nutmeg, and salt. Gradually add to the wet mixture, stirring until combined. Fold in walnuts if using. - Bake:
Pour batter into a greased 9×5-inch loaf pan. Bake at 350°F (175°C) for 40–45 minutes, or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack. - Glaze:
Mix powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled loaf.
