1. Wash the Lemons

  • Rinse thoroughly under warm water to remove dirt and wax.
  • Organic lemons are best since the peel will be consumed.

2. Peel or Zest

  • Use a zester or peeler to remove only the yellow outer layer.
  • Avoid the bitter white pith underneath.

3. Dry the Peels
Choose one of the following methods:

  • Dehydrator: Spread peels in a single layer on trays. Dry at 95–115°F (35–46°C) for 6–10 hours until brittle.

4. Grind Into Powder

  • Once peels are fully dry, grind them into a fine powder using a spice grinder, coffee grinder, or blender.

5. Sift (Optional)

  • Pass the powder through a fine mesh sieve to remove any coarse pieces.

6. Store

  • Transfer to a sealed container or spice jar.
  • Store in a cool, dry place. Shelf life: 6–12 months.
