Amish Harvest Casserole is a rustic, nourishing dish made with ground beef, vegetables, beans, and a savory tomato sauce, all baked together until bubbly. It’s perfect for fall or winter dinners, offering wholesome comfort with every bite. This dish reflects the Amish tradition of making hearty, family-sized meals from simple pantry staples.
Ingredients (Serves 6–8)
- 1 lb (450 g) ground beef
- 1 small onion, diced
- 2 cups cooked rice
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) green beans, drained
- 1 can (15 oz) corn, drained
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried oregano or Italian seasoning
- 1 cup shredded cheddar cheese (optional topping)
Instructions
- Cook beef & onion: In a large skillet, brown the ground beef with diced onion until no longer pink. Drain excess grease.
- Mix casserole base: In a large mixing bowl, combine cooked beef mixture, rice, kidney beans, green beans, corn, tomato sauce, diced tomatoes, garlic powder, salt, pepper, and oregano. Stir until well combined.
- Transfer & bake: Pour mixture into a greased 9×13-inch baking dish. Cover with foil and bake at 350°F (175°C) for 30–35 minutes.
- Optional topping: Remove foil, sprinkle shredded cheddar cheese on top, and bake an additional 10 minutes until melted and bubbly.
- Serve: Let rest for 5 minutes before serving. Perfect with homemade bread or a crisp side salad.
