Easy Taco Pie

Introduction

This Easy Taco Pie takes all the flavors you love from taco night and bakes them into one warm, cheesy, and satisfying dish. With layers of seasoned beef, tortillas, beans, and cheese, it’s a weeknight dinner winner that comes together fast and disappears even faster.


Ingredients (Serves 6–8)

  • 1 lb (450g) ground beef or ground turkey
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/2 cup water
  • 1 (15 oz) can refried beans
  • 1 cup salsa
  • 3 large flour tortillas (10-inch) or 4 medium ones
  • 2 cups shredded Mexican blend cheese
  • Optional toppings: shredded lettuce, diced tomatoes, sour cream, jalapeños, avocado, black olives

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish or similar baking dish.
  2. Cook the beef:
    In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Stir in taco seasoning and water; simmer for 2–3 minutes.
  3. Layer the pie:
    • Place one tortilla in the bottom of the pie dish.
    • Spread 1/3 of the refried beans over it.
    • Add 1/3 of the beef mixture, 1/3 of the salsa, and 1/3 of the cheese.
    • Repeat layers until all ingredients are used, ending with cheese on top.
  4. Bake:
    Bake uncovered for 20–25 minutes, or until the cheese is melted and bubbly.
  5. Serve:
    Let cool for 5 minutes before slicing. Add your favorite taco toppings and enjoy.

Tips & Variations

  • Swap flour tortillas for corn tortillas for a gluten-free version.
  • Add black beans, corn, or sautéed peppers between layers.
  • Make it spicy with pepper jack cheese or hot salsa.
