Introduction:
This homemade potato soup is rich, velvety, and packed with comfort. Made from scratch with tender potatoes, aromatic veggies, and a creamy base, it’s the kind of soul-warming bowl you’ll crave on chilly nights—or anytime you need a little comfort.
Ingredients:
- 4 medium potatoes, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 4 cups chicken or vegetable broth
- 1 cup milk or half-and-half
- 1/2 cup sour cream or heavy cream (for richness)
- 2 tbsp butter
- Salt and black pepper, to taste
- Optional toppings: shredded cheese, cooked bacon, green onions
Instructions:
- Sauté Veggies:
In a large pot, melt butter over medium heat. Add onion, garlic, carrots, and celery. Cook until softened (about 5 minutes). - Add Potatoes & Broth:
Stir in diced potatoes and pour in broth. Bring to a boil, then reduce heat and simmer uncovered for 15–20 minutes, or until potatoes are very tender. - Blend (Optional):
For a smooth soup, use an immersion blender to puree part of the soup in the pot. Or leave it chunky for more texture. - Stir in Creamy Goodness:
Add milk and sour cream or heavy cream. Stir gently and heat through—don’t boil. - Season & Serve:
Add salt and pepper to taste. Serve hot, topped with cheese, bacon, or green onions.
