Ingredients:
- 8 oz (225g) cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 2–3 fresh jalapeños, finely chopped (seeds removed for less heat)
- 1/4 tsp garlic powder
- 10–12 egg roll wrappers
- 1 egg, beaten (for sealing)
- Oil for frying
- Optional: ranch or chipotle mayo for dipping
Instructions:
- Make the Filling:
In a bowl, mix cream cheese, cheddar, bacon, jalapeños, and garlic powder until well combined. - Assemble Egg Rolls:
Place an egg roll wrapper on a flat surface like a diamond. Spoon about 2 tbsp of filling into the center. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the edge with beaten egg. - Fry:
Heat oil in a deep skillet or fryer to 175°C (350°F). Fry egg rolls in batches for 3–4 minutes or until golden brown and crisp. Drain on paper towels. - Serve:
