Fried Egg with Tomato

Introduction:
Fried egg with tomato is a quick, rustic dish found in many home kitchens around the world. With sweet, juicy tomatoes and a runny or set egg, it’s perfect for a light breakfast, easy lunch, or late-night comfort food.


Ingredients:

  • 2 large eggs
  • 2 medium ripe tomatoes, chopped or sliced
  • 1 tbsp olive oil or butter
  • 1 garlic clove, minced (optional)
  • Salt and black pepper, to taste
  • Optional: chili flakes, fresh herbs, or bread for serving

Instructions:

  1. Sauté Tomatoes:
    Heat olive oil in a skillet over medium heat. Add garlic (if using) and cook for 30 seconds. Add tomatoes and a pinch of salt. Cook for 4–5 minutes, stirring occasionally, until tomatoes soften and begin to break down.
  2. Add Eggs:
    Push the tomatoes slightly to the sides of the pan. Crack the eggs into the center or directly over the tomatoes. Sprinkle with salt and pepper.
  3. Cook:
    Cook until the whites are set and the yolks are done to your liking. You can cover the pan briefly to help the tops cook through.
  4. Serve:
    Spoon onto a plate and garnish with herbs or chili flakes if desired. Serve with crusty bread, rice, or on its own.
