- 2 large eggs
- 2 medium ripe tomatoes, chopped or sliced

- 1 garlic clove, minced (optional)
- Salt and black pepper, to taste
- Optional: chili flakes, fresh herbs, or bread for serving
Instructions:
- Sauté Tomatoes:
Heat olive oil in a skillet over medium heat. Add garlic (if using) and cook for 30 seconds. Add tomatoes and a pinch of salt. Cook for 4–5 minutes, stirring occasionally, until tomatoes soften and begin to break down. - Add Eggs:
Push the tomatoes slightly to the sides of the pan. Crack the eggs into the center or directly over the tomatoes. Sprinkle with salt and pepper. - Cook:
