Caprese Flatbread with Whipped Garlic Feta

Introduction:
This Caprese flatbread is a stunning mash-up of rustic charm and Mediterranean flair. A crispy base is layered with creamy whipped garlic feta, juicy tomatoes, fresh basil, and a balsamic drizzle—perfect as a light lunch, appetizer, or elegant party dish.

Ingredients:

For the Flatbread:

  • 2 store-bought or homemade flatbreads (naan or pita work great)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh mozzarella balls or slices
  • Fresh basil leaves
  • Olive oil, for brushing
  • Balsamic glaze, for drizzling

For the Whipped Garlic Feta:

  • 1/2 cup crumbled feta cheese
  • 1/4 cup cream cheese (softened)
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • Black pepper, to taste

Instructions:

  1. Make Whipped Feta: Blend feta, cream cheese, garlic, olive oil, and black pepper in a food processor until smooth and fluffy. Set aside.
  2. Toast Flatbread: Preheat oven to 200°C (400°F). Brush flatbreads lightly with olive oil and bake for 6–8 minutes, or until lightly crisped.
  3. Assemble: Spread a generous layer of whipped garlic feta over each warm flatbread. Top with mozzarella and cherry tomatoes.
  4. Bake Again (Optional): For melty cheese, return to the oven for 3–5 more minutes.
  5. Garnish & Serve: Top with fresh basil and a drizzle of balsamic glaze. Slice and serve warm or at room temperature.

Enjoy!
