This Caprese flatbread is a stunning mash-up of rustic charm and Mediterranean flair. A crispy base is layered with creamy whipped garlic feta, juicy tomatoes, fresh basil, and a balsamic drizzle—perfect as a light lunch, appetizer, or elegant party dish.
Ingredients:
For the Flatbread:
- 2 store-bought or homemade flatbreads (naan or pita work great)
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh mozzarella balls or slices
- Fresh basil leaves
- Olive oil, for brushing
- Balsamic glaze, for drizzling
For the Whipped Garlic Feta:
- 1/2 cup crumbled feta cheese
- 1/4 cup cream cheese (softened)
- 1 garlic clove, minced
- 1 tbsp olive oil
- Black pepper, to taste
Instructions:
- Make Whipped Feta: Blend feta, cream cheese, garlic, olive oil, and black pepper in a food processor until smooth and fluffy. Set aside.
- Toast Flatbread: Preheat oven to 200°C (400°F). Brush flatbreads lightly with olive oil and bake for 6–8 minutes, or until lightly crisped.
- Assemble: Spread a generous layer of whipped garlic feta over each warm flatbread. Top with mozzarella and cherry tomatoes.
- Bake Again (Optional): For melty cheese, return to the oven for 3–5 more minutes.
- Garnish & Serve: Top with fresh basil and a drizzle of balsamic glaze. Slice and serve warm or at room temperature.
