Creamy cucumber salad is a light and tangy side dish that’s perfect for hot days. With crisp cucumber slices tossed in a smooth, herby dressing, it pairs beautifully with grilled meats, sandwiches, or summer picnics.
Ingredients:
- 2 large cucumbers, thinly sliced
- 1/2 small red onion, thinly sliced
- 1/2 cup sour cream or Greek yogurt
- 1 tbsp mayonnaise (optional, for extra richness)
- 1 tbsp white vinegar or lemon juice
- 1 tsp sugar (optional, for balance)
- 1 tbsp chopped fresh dill (or 1/2 tsp dried)
- Salt and pepper, to taste
Instructions:
- Prep Cucumbers: If desired, lightly salt the cucumber slices and let them sit for 10–15 minutes to draw out excess moisture. Pat dry with paper towels.
- Make Dressing: In a bowl, whisk together sour cream, mayonnaise (if using), vinegar or lemon juice, sugar, dill, salt, and pepper.
- Toss Salad: Combine cucumbers and onions in a large bowl. Pour dressing over and toss gently to coat.
