1 cup granulated sugar (plus more for sprinkling on top)
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sour cream
Instructions:
Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
Cream butter and sugar: In a large bowl, combine the melted butter and 1 cup granulated sugar. Beat for at least 1 minute to incorporate air into the mixture.
Add eggs & vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
Mix dry into wet: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Fold in sour cream: Gently fold in the sour cream until evenly incorporated.
Transfer & bake: Pour the batter into the prepared baking dish. Smooth the top and sprinkle a little granulated sugar over it.
Bake: Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
Cool & serve: Let cool slightly before serving. Enjoy as-is, or with fresh berries or a cup of coffee.
